Are these the only examples we have of Gaby Deslys singing?

If there are more where can we go to listen to them?

There are three matrices listed for Gaby Deslys in The Complete Entertainment Discography (Rust & Debus, 1989), one of which was unissued:

Vienna, 17 October 1910

489h------------Tout en rose-----------HMV 2-033039
490h------------Philomene--------------HMV 2-033040
491h/491½h----La Parisienne----------rejected

Both of the above HMV discs were single-faced. [Putting in all those dashes isn't the most conventional method of displaying discographical information, but it was the only way I could prevent the issue number, title and matrix from being jumbled together!]
